FORE QUARTER

HALF BEEF (better known as a SIDE OF BEEF)
This consists of the Hind Quarter and Fore Quarter combined.
300 Lbs. hanging weight @ going rate per lb.
Price includes cutting, wrapping and freezing.
We cut and wrap to you specifications.
Approximately 30% loss through cutting (bones and fat).
Example: 300 X $4.49 = $1,347.00.
300 X .30 = 90 lbs. loss leaving approx. 210 lbs. in freezer
This amount varies depending on cutting instructions.
Delivery takes two to three weeks, depending on how busy we are.
We put your name on list. When we have the beef hanging, we call you to quote the price. If the price is okay with you, we then take your instructions on how you want it cut and wrapped (or we can take instructions now if you would like).

HALF HOG (better known as a SIDE OF PORK)
100/120 lbs. @ going rate per lb.
Price includes cutting, wrapping and freezing, curing ham and bacon, rendering lard and making sausage out of trimmings.
Because of lard and use of virtually all cuts, there is very little loss.
Example; 100 x $2.79= $279.00.
Fresh Cuts: Loin (chops, country ribs, loin roast), Spare Rib, Shoulder (this can be put into sausage or cut into pork steaks or used as a roast), Tip, Feet, Lard.
Sausages: include Goetta and/or Liver Pudding, Fresh and/or Smoked Sausage.
Smoked Cuts: Ham and Bacon and Cottage Ham.
Delivery on all fresh cuts is about one week. The smoked meat takes another two weeks.
We will take your name and Dick or Denny will call you for your cutting instructions.

Locally Raised Beef
Stehlin’s Meat Market sells CHOICE GRAIN FED BEEF . We have been dealing with the same farm families for three generations. We know how these farmers feed their cattle and have a common trust with them that they will continue to do it the same way for years to come.
These farmers feed corn to the cattle for the final two months before bringing them to slaughter. This produces choice (some fat, nicely marbled) beef as opposed to select (lean) or prime (very fatty).
We age our beef 7 to 14 days. The aging process allows the tissue to break down gradually so that the meat will be more tender when you cook it. Longer aging causes the meat to darken in color and results in more trimming of the outer edge.
